Black Bean Standard


Black Bean Standard

The Black Bean Standard is a companion dish to virtually any main course.  It is a standard to barbequed meats, tacos, as a compliment adorning white fish, or as a side to your egg breakfast.  This dish is versatile and you will find that you will make it often.  It's even great as a left over.  Just heat and eat.  Ive been making it for about twelve years now and I still think of it as a great standby.

Black Bean Standard

1 Swirl of Olive Oil
1/2 Diced Yellow Onion
1 14 oz. Can Black Beans
1 14 oz. Can Diced Tomatoes
1 6 oz. Can Green Chilies
3/4 C. Fresh or Frozen Corn
1 T. Chopped Cilantro
Salt & Pepper

Saute onions at medium heat in a sauce pan seasoned with olive oil until translucent.  Add black beans, tomatoes, green chilies and corn and heat through, stirring occassionally.  When ready to serve, season with salt and pepper and mix with fresh chopped cilantro.  Serves six as a side dish.
